Atjar tjampoer is a topping or side dish from Indonesia. We also call atjar tjampoer Indian sour, and in English sometimes ‘acar campur’. If you want to compare atjar tjampoer to a better-known international dish, you could call it Indonesian kimchi or Indonesian sauerkraut.
The base of atjar tjampoer consists of vegetables pickled in sweet and sour. We make our organic atjar tjampoer from 5 vegetables: cabbage, carrot, pepper, gherkins and onion. These are pickled in a marinade of ginger and turmeric, vinegar and rice syrup. This creates a delicious fresh flavour and crunchy bite that balances perfectly with savoury Indonesian dishes.

In the pickle press, fermenting vegetables goes extra fast. Ideal if you want to change flavours.
