Yaki udon, or Japanese fried noodles, is a tasty and versatile dish that is quick to please. You put this udon dish on the table in less than 15 minutes. This makes it a great dish to make for lunch on a home working day, or just meal prep and take to the office. Hot or cold, yaki udon is delicious in all ways. We naturally made a vegan version, which still has a nice amount of protein thanks to the edamame. The sauce is traditional and basic Japanese at the same time, full of umami. Also delicious to eat with the whole family!

This is how you make it

  1. Soak the sengiri daikon for 10 minutes.
  2. Cook the udon according to the instructions on the packet. Add the edamame for the last 5 minutes. Rinse with cold water and set aside.
  3. Finely chop the onion, garlic and Chinese cabbage.
  4. Heat 1 tablespoon of sesame oil in a wok pan over medium-high heat. Fry the onion until translucent. Add the garlic and Chinese cabbage. Stir-fry until the vegetables are tender but still crunchy.
  5. Add shoyu, mirin, sesame oil, coconut blossom sugar and genmai su to the pan. Stir well to combine.
  6. Squeeze the daikon and add along with the udon noodles and edamame. Stir well to combine.
  7. Serve the udon in bowls and garnish with furikake.
