Yum woon sen is a Thai salad with glass noodles. Of course, this Thai recipe is all vegetable, so yum woon sen without chicken or prawns. The edamame beans provide extra protein, as do the hazelnuts. Yum woon sen always needs a super tasty marinade or dressing with a little spice. They usually use fish sauce and sugar in Thailand, but we have tamari and maple syrup for that. A yum living sen recipe that is vegan, easy and delicious. You make it in no time and this glass noodle salad is top to take to work. Eat the salad cold at the office, or warm it up lightly. You can do both!

This is what you need

Glass noodles1 portion
Edamame beans50 g
Red onion1/2
Cucumber1/3
Spring onion1
Fresh cilantrolittle hand
Fresh mintlittle hand
Hazelnuts whitelittle hand
For the dressing:Tamari2 tbspMaple syrup grade A1 tbsp
Garlic1 clove
Sambal ulek1 tsp
Lime juice3 tbsp

This is how you make it

  1. Prepare the vegetables. Chop the onion. Thinly slice or coarsely grate the cucumber. Finely chop the spring onion and coarsely chop the fresh coriander and mint.
  2. Cook the glass noodles according to the instructions on the packet. Rinse them under cold water, drain and set aside.
  3. Press or chop the garlic. Combine all ingredients for the dressing in a small bowl and stir well.
  4. Heat the edamame beans according to the instructions on the packet. Rinse them under cold water and set aside.
  5. Add the red onion, cucumber, spring onion, fresh coriander and mint to a large bowl.
  6. Add the glass noodles and edamame.
  7. Pour the dressing over the salad and stir until all the ingredients are evenly coated with the dressing.
  8. Taste the salad and adjust the flavour by adding more lime juice, soy sauce, maple syrup or sambal.
  9. Coarsely chop the hazelnuts. Garnish the salad with these for extra crunch.
  10. Serve the vegan yum woon sen immediately as a side dish, lunch or light supper.

Tip(s)

  • Yum soon wen is usually eaten lukewarm or at room temperature. But chilled or with warm noodles, this glass noodle salad is also very tasty!
  • Also delicious with chopped peanuts or cashew nuts.
