How do you make gingerbread yourself? And more importantly: how do you make gingerbread vegan? This vegan gingerbread recipe has it all. All ingredients are plant-based, and we only sweeten with unrefined sugars, with what we believe to be the best sugar there is: coconut blossom sugar. The great thing about coconut blossom sugar is that it has exactly the same effect as granulated sugar when baking. It crystallizes and makes your pepernoot crunchy. It just does not have the disadvantages of granulated sugar, because your blood sugar level does not peak. Win win! Oh, and you can't tolerate wheat very well, but can you tolerate spelled better? Another reason to make gingerbread cookies yourself and save this recipe as soon as possible!

This is how you make it

  1. Preheat the oven to 180 degrees.
  2. Line a baking tray with parchment paper.
  3. Place all ingredients in the food processor and grind to a dough.
  4. Make small balls and place them on the baking tray. Press them slightly so that they get the shape of spice nuts.
  5. Bake them for 12-15 minutes.
  6. Let cool and store in an airtight container.
