Vegan custard with lemon and cinnamon

Make your own vegan custard? You can do that with kuzu. Kuzu is a binding agent made from the starch of the Japanese kuzu plant. It is vegan, gluten-free and free of additives. This way you can make your own custard in no time!

This is what you need

Kuzu white30 g
Cinnamon stick1
Lemon1/2
Cinnamon powder1 tsp
Plant-based milk (we used coconut drink)500 ml
Coconut blossom sugar50 g

This is how you make it

  1. Dissolve the kuzu in 100 ml of the plant-based drink and set aside.
  2. Grate the lemon zest.
  3. Place the rest of the plant-based drink in a saucepan, along with the cinnamon stick and lemon zest. Bring to a boil, reduce heat and simmer very gently for 10 minutes.
  4. Add the coconut blossom sugar. Boil for a few minutes until dissolved.
  5. Add a pinch of turmeric powder to get a light yellow color.
  6. Add the kuzu paste and keep stirring for about 2 minutes until the custard has thickened. Don't let it boil.
  7. Serve in small glasses and let cool.
  8. Serve after approx. 2 hours.
