Thai noodles with chicken and sweet peanut sauce

Are you going to make noodles with peanut sauce? Top choice! For many people, peanut sauce (or satay sauce) includes chicken. Chicken satay is a classic, but how do you do that if you're vegan? In this vegan noodle recipe we use seitan. It contains a lot of protein and tastes a bit like chicken. An easy recipe with many different flavors! Pro tip for that good peanut sauce: Use real peanut butter as a base. You can choose your own vegetables in this dish. We used zucchini and red onion, but stir-fried carrot, broccoli, leek, pak choi, haricots verts or spring onions also work well. your choice!

This is how you make it

  1. Boil a pan with plenty of water. Cook the noodles for 3-4 minutes. Rinse with cold water.
  2. Drain the seitan. Slice the large pieces. Grill the seitan over high heat for about 3 minutes. Turn the heat down. Deglaze with the mirin.
  3. Mix the ingredients for the sauce, except for the sesame seeds. Add to the seitan and stir until smooth, about 2 minutes.
  4. Stir-fry the vegetables of your choice on hot fire for 2-5 minutes. We did that in coconut oil and added a dash of ginger syrup at the last minute.
  5. Cut the spicy red peppers into pieces.
  6. Serve the plates and sprinkle the seitan with sesame seeds and peppers.

Tip(s)

  • Do you eat gluten-free? Then use tofu or tempeh instead of seitan.
