It's basically a noodle salad with a delicious dipping sauce made with soy sauce, mirin, and rice vinegar. In Japan, they love having Zaru Soba for lunch, preferably on a terrace or in a soba shop. This is how you make it

  1. Cook the soba noodles for 5-6 minutes until tender. Make sure they are al dente. Rinse the cooked noodles under cold running water to remove excess starch and cool them down. Drain well.
  2. Meanwhile, finely chop the green onions. Cut a sheet of nori into thin strips.
  3. In a small bowl, mix the soy sauce, mirin, genmai su, and maple syrup. Stir in wasabi if you like it. Pro tip: Wasabi adds the perfect finishing touch to Zaru Soba!
  4. Place the cooled soba noodles in a bowl. Mix the sauce with the noodles. Garnish with green onions, sushi nori, and furikake. If you want to eat Zaru Soba like a true Japanese, use chopsticks to dip small portions of soba into the sauce. In that case, serve the sauce in a separate bowl and add garnish with every bite.
