Pizza or pinsa tonight? This is not a typo, pinsa is actually a kind of pizza, but just a bit fluffier. Actually, it's a mix between focaccia and pizza. A fat trend for good reason, as pinsa is delicious and easy to top and prepare. This pinsa Mediterranea is not topped with tomato sauce (which is not at all necessary with pinsa), but with hummus. You can make your own, of course, but hummus from a jar is just as easy. The artichokes in olive oil give your pinsa that tasty Mediterranean vibe. For a special pinsa for lunch or to share with your friends or family.

This is how you make it

  1. Preheat the oven to 200°C.
  2. Halve the cherry tomatoes. Cut the artichokes into thirds.
  3. Place the pinsas on a baking tray.
  4. Spread the hummus on the pinsas. Top each pinsa with artichokes and cherry tomatoes. Sprinkle with salt and pepper to taste.
  5. Spread the vegan grated cheese over the pinsas.
  6. Bake the pinsas in the preheated oven for 8-10 minutes, or until the edges are golden brown and the cheese is melted.
  7. Drizzle with olive oil to taste (optional).
