How do you make oreo cookies? Isabel invented that for you. This recipe for oreo cookies has become an unnoticed favorite at TerraSana. They are tasty, but they also look super nice. But the best thing about this vegan recipe is of course that the ingredients are much purer than the real Oreos. Of course, the real Oreo cookies can never match this healthy version of Oreos. That means no sugar-rich chocolate, but with almond paste and dates. Delicious sweet cookie with unrefined sugars!

This is how you make it
Put the pecans together with the pitted dates, the raw cocoa, itvanilla extract and a pinch of salt in a food processor and grind fine.
Spread a baking paper on the counter. Make small dough balls with your handsof the mixture and flatten them with your fingers so that they look like some kind of oreo cookie. Repeat this until the mixture is finished and you have approx. made 24 cookies.
Place the baking paper carefully in the freezer and leave there for 2 hours.This makes the cookies firmer and easier to fill.
Remove the cookies from the freezer after 2 hours and separate them from the baking paper.
Mix three generous tablespoons of white almond paste with one tablespoon of maple syrupand put a good teaspoon of this filling on every second biscuit.
Push a cookie with filling and an empty cookie together: you now have onehealthy oreo cookie!
Keep them in the freezer. That way they stay good for a long time and still arealways ready-to-eat!
