A delicious homemade cocktail (yes with alcohol, woops!). Made from matcha, lime and coconut. The combination of sour, sweet and umami makes this cocktail recipe really tasty. Inspired by the Peruvian pisco sour cocktail.

This is how you make it
Squeeze the limes and add the juice to the cocktail shaker. Then add the matcha latte, coconut milk, maple syrup, gin and ice cubes and shake for around 30 seconds.
Pour into glasses.
Add the chickpea liquid to a bowl and beat with a mixer for 3-5 minutes until stiff. Add some icing sugar (slowly!) if desired to make the cream a little sweeter.
Finish the drink with a couple of tablespoons of the chickpea liquid. Use the chickpeas for the 'oriental soup' recipe.

Prefer to avoid alcohol? This drink is also delicious without gin.
