What is muhammara? you may think. Muhammara is a Mediterranean spread, made from paprika and walnuts. A tasty alternative to hummus. It's healthy and super delicious, especially if you make it yourself. Usually muhammara is a bit coarse in texture, but you can grind the spread as finely as you want. A recipe to remember!

This is what you need

For the muhammara:Grilled peppers1/2 jarSpicy red peppers6
Lemon1/2
Balsamico cream3 tbsp
Cumin1 tsp
Cayenne pepper1/4 tsp
Oat flour50 gWalnuts50 g
For the garnish:Piadina wheat and hemp2
Arugulafew hands
Chickpeas (in a jar)4 tbsp

This is how you make it

  1. Squeeze the bell pepper pieces gently so that the moisture is out of there as much as possible.Place the bell pepper on clean kitchen towels and pat dry.
  2. Do the same with the spicy red peppers.
  3. Squeeze half the lemon.
  4. Put all the ingredients for the muhammara in the blender and grind into onesemi-coarse mixture. Prefer a fine mixture? Then leave it in the blender a little longer to grind.
  5. Heat the piadine 1 for 1 for ten seconds in a dry frying pan.
  6. Spread the muhammara over the piadine. Garnish with grilled piecesbell pepper, arugula, chickpeas and crushed walnuts.
  7. If preferred top off with an extra dash of balsamic cream.
