Donburi is Japanese for "bowl" or "bowl". It is a rice dish similar to the popular poke-bowl. It combines rice, vegetables and a protein source of your choice, such as tofu in this vegan donburi recipe. Traditionally, donburi in Japan is often eaten with fish or meat, but this spiced teriyaki tofu provides that delicious umami flavour that you normally taste mostly in meat. So this vegan donburi is perfect for vegetarians and vegans, and also for busy working people who want to eat healthy and varied meals. It is ideal for mealprep: prepare the rice and tofu in advance, add some vegetables and enjoy a nutritious meal for several days.

This is how you make it

  1. Prepare the sushi rice according to the instructions on the packet.
  2. Squeeze the tofu well and cut into slices. Cut the Chinese cabbage into strips.
  3. Heat the coconut oil in a frying pan. Add the tofu and fry for 5-7 minutes, turning until golden brown.
  4. Turn down the heat and let the pan cool slightly. Then add the teriyaki. Make sure each slice is well coated with the sauce.
  5. Place the tofu in a bowl.
  6. Put the white parts of the Chinese cabbage in the same frying pan and fry for about 5 minutes in the leftover teriyaki. Add the green parts and fry for another 2-3 minutes, until the cabbage is tender. While frying, add water if needed.
  7. Divide the sushi rice, tofu and cabbage between 2 bowls. Sprinkle some extra teriyaki over the tofu, if necessary. If necessary, mix a few knife points of ume paste with the rice to add flavour to the rice.
  8. Serve your donburi with wafer-thin slices of radish.
