Aloo gobi is one of the most popular Indian dishes. Aloo means potato, gobi means cauliflower. A delicious oven dish that you eat as a side dish without sauce, or as a curry with, for example, Indian dahl and naan.

Thai Red Curry Paste75 g
Olive oil2 tbsp
Water4-6 tbsp
Lime juice2 tbsp

This is how you make it

  1. Preheat the oven to 200°C.
  2. Break the cauliflower into small florets and wash them clean.
  3. Peel the potatoes or scrub them clean with a vegetable brush. Cut into cubes of 1-2 cm.
  4. Cut the tomatoes into cubes.
  5. Press the garlic. Mix together with the red curry paste, water, olive oil and lime juice in a baking dish.
  6. Add the cauliflower and potatoes and toss with the sauce until well coated. Pour in the tomatoes.
  7. Bake in the oven for 1 hour. Stir every now and then.
  8. Finely chop the coriander or parsley and mix with the aloo gobi.

Tip(s)

  • Serve the aloo gobi with dahl and naan.
