Quinoa stir-fry with green vegetables

How do you make your quinoa bowl exciting? Make it a tasty quinoa stir-fry! Quinoa is a source of protein and therefore fine for plant-based eaters. Using teriyaki as a sauce will give your quinoa bowl a sophisticated flavour. And if you use TerraSana's ready-made teriyaki sauce, you only need to pluck very few ingredients from the cupboard. For a slightly spicier twist to this dish, you can also use sriracha or cayenne. That way you add a little spice to this quinoa stir-fry dish. It's a quick and easy dish, perfect for busy days!

This is what you need

Mixed quinoa150 g
Olive oil1 tbsp
Mushrooms200 g
Red onions2 small
Zucchini1
Spinach150 g
Chickpeas (in a jar)200 g
Teriyaki wok sauce8 tbsp
Srirachato taste

This is how you make it

  1. Prepare the quinoa according to the instructions on the packet.
  2. Finely chop the mushrooms, red onions and courgette. 
  3. Heat the oil in a large frying pan over medium-high heat.
  4. Add the mushrooms, red onion and courgette to the pan. Stir-fry for 3-5 minutes, or until the vegetables soften but are still crunchy. 
  5. Add the quinoa to the vegetables in the pan and mix well.
  6. Pour the teriyaki wok sauce over the quinoa vegetable mixture and stir until everything is evenly coated with the sauce. Heat for a few more minutes on low heat while continuing to stir. 
  7. At the end, add the spinach and let it shrink.
  8. Taste and add more teriyaki sauce if needed for extra flavour.
  9. Garnish with sesame seeds or toasted cashews, if desired.

Tip(s)

  • Vegan proteins in this recipe are mainly in the quinoa and egg whites. Want to add more protein? Then fry edamame with it or garnish your quinoa bowl with pumpkin seeds, sunflower seeds or nuts.
